I'd make sure to keep some nori in the tank. Other than that I wouldn't worry about it. The fact that he's eating anything is good. Just as long as he keeps eatinghe should be fine. For weeks after I add a new fish they are pretty jumpy most of the time. It takes a while for them to feel safe and learn the lay of the tank.

My Kole is pretty much the same, mostly a picker, picking at the rocks and glass never really eats the foods I put in but will eat Nori sometimes and flake food, he is very healthy and vibrant so I would say normal. The hiding part mine does not hide as much anymore but he is also not one to come out all that much either, I think it is because not excited for the food I bring 
In time they will learn to take other foods. I'd try some brine shrimp and mysis shrimp. They are certainly a 'flighty' fish for a while, but they do settle down after a few weeks/months provided no other fish terrorize them.
