Meat Night - January 9th

Corey, I just smoked a 70# pig for Christmas at the folks house, it was darn good! :D

And you stole my idea, so I have to come up with something else:(




They thought the other comment was inappropriate? At least he left alittle to the imagination.
 
Sometimes a pig is just a pig, sheesh...:o

Wife doesn't want to go. She thinks it's only a manly event. Are there going to be women there or is this testoserone laiden event?
 
Corey, what is going to be finished at the house? Will there be heat and water? I know Melissa won't want to stand outside all night most likely.

We have heat, and a fire place, will have a bathroom
 
I will be making Fried Chicken, Bacon wrapped hot dogs grilled and made into corn dogs also, deep fried meatballs with Feta in the center, fried haddock bites, fried shrimp and fried feta. The pig will have to wait till spring, i was having issues with getting something to cook it on. What will YOU be making?
 
I'm bringing:

- Homemade jalapeno poppers stuffed with various ingredients
- Selection of marinated steak tips
- Scrapple
- Chicken hearts (a MN staple)
- Fresh venison steaks
- San Juan Miguel
- Magnesium steering wheels

My wife and 10mo old daughter are coming. I know Cory's wife will there too.

Working on my menu, Cory will there be a grill there to cook on? Was planning on doing a chipotle and cumin rubbed cold-smoked beef tenderloin, just wondered if I had to cook it fully before arriving?

Ohhh... that sounds great! There will most definitely be a grill :)

It is GOOD Steve, it's first seared then cold smoked with Tabasco smoking chips(made from the used casks they age Tabasco in) and finished to temp on the grill! Thanks for the answer.

So, I will be bringing so far:

-Chipotle and Cumin rubbed cold-smoked Beef Tenderloin
-Chicken and Andouille Sausage Gumbo
-Southern Potato Salad(a must with Gumbo!)
-Mexican Cornbread with roasted corn and cilantro
-And something to wash it all down it!;)

Are fireworks permissible?:D
