Pork Garlic anyone?

So my Thai non-english speaking/reading mom who came to visit me cooked me a dinner with fish garlic.

Lol found out after dinner coz i was trying to feed my tang. Well at least i wont have ick for a while

Seriously, can u use garlic powered or freeze dried garlic in powder? Obvious needs to be pretty free of impurities? I have a freeze drier can I freeze dry frozen garlic cubes (frozen ideal for lyophilzation)
