What a good size bag to run carbon in sump?

Would depend on the size of tank and how often you plan to change it. Make sure to use only "saltwater safe" carbon of course.

Haha Kevin I could do that as I have plenty.

My tank is a 56g and just want to run carbon every so often, but I keep seeing different size microns 300 and 800 microns.

Actually, that is what I have been using to float carbon in my sump

I have the wife pick them up for me so I don't look like a weirdo in the store

For 56g you should only need about 1/2 cup or so (I read over on RC recently that you should use 1/2 cup per 50g). So you shouldn't need a very big bag. And get the size that won't let any carbon fall out.:D

i hope you don't get a ladder in them:D

I would use the largest size mesh you can get away with for the brand of carbon you are using. The 1/2 cup per 50 gallons is the general rule of thumb but you should be able to fine tune how much you need and how often you need to change it for your particular system. Most sources state that carbon loses its effectiveness in a very short time so i use a small amount and change it twice a week sometimes once a week when i get lazy.
