I am looking to relocate my TDS meter so it'a not under my train layout. I am assuming I can just solder in new wiring to extend it but just wanted to double check...

Only one way to find out! Only issues might be the increased resistance with the extra wire that could cause false readings and increased battery consumption.

Do it. And recal. Should be okay.
I think the probe is a passive device so any extra resistance from the wire of the probe shouldn’t shorten the battery life.
The most battery draining is the monitor that display the number. If you leave it on and let it turn off by itself vs. turning it off after you’ve seen the number, is what matters to the battery life.

I wouldn’t even solider it. I would just use small wire nuts and some electrical tape over them. If you really want to get fancy you could put them in a junction box and just splice.
